What are Dabs?

Dabs are flat fish that are bottom trawled in the North East Atlantic ocean. They are a benthic fish – living near the sea bed and tend to be in season from January to June. The average yield from Dabs is 60%. Alternatives to Dabs are Plaice, Lemon Sole, Flounders and Witch.

The aroma of Dabs is buttery, as is its taste. The flavour of Dabs is more intense nearer the tail where they have an earthy flavour. The firm, moderately moist flakes of flesh are bright white and small.
